Hello Friends! Okay, so I know that I have been a little heavy on the recipes these days here on Walnut Street! I promise that next week we are going to get back to some more DIY projects but I do have one more that I want to share with you today!
If you know me at all then you know that I have a pretty big sweet tooth, so the fact that as of tomorrow I will have gone a whole month without sugar is pretty amazing! BUT - this morning I had such a craving that I was determined to come up with an easy recipe that wouldn't undo all my hard work! This is what I came up with:
Chocolate Chunk Coffee Brownies
(and man are they good, even hubbs gave them the thumbs up!)
Two whole eggs plus 2 egg whites
1 cup of splenda
4 oz of unsweetened apple sauce
1 c of cocoa powder
1 c of whole wheat flour
1 tablespoon vanilla
1 tablespoon of baking powder
1 tablespoon of baking powder
1 teaspoon of salt
1/2 cup of STRONG brewed coffee (I used decaf since some were going to be eaten by kiddo's)
1 cup of carob chips (find online or at your local healthfood store)
In a mixer, cream eggs and splenda. Add apple sauce, and vanilla.
Slowly add sifted dry ingredients.
Add hot coffee at the end (if you have any dry ingredients that didn't incorporate well the hot coffee helps dissolve everything.
Stir in carob chips.
Bake in standard, greased, square brownie pan at 300 for 55 minutes
Let cool briefly before serving.
* Notes - egg yolks are where all the fat is in an egg but too many egg whites are "drying" - between the coffee and the applesauce these brownies stay nice and moist, minus all the fat!
* For adults only use regular coffee if you like.
*Don't know what in the world I mean by carob chips...GO HERE for more information!
Best part of these yummy brownies is that they only have 190 calories and 3.5 grams of fat!
(Based on a square brownie pan divided into 9 brownies)
Hope that you all will give these a try! Even better...why not make them and not tell anyone how healthy they are just let them tell you how great they taste and then spring it on them!

This looks like a great recipe. However, I can't have splenda (it gives me heart palpitations!!!), so I would use stevia. And I'm gluten-free, so no wheat flour - I'd use one of my g-free flour mixes. I love the use of carob chips and adding coffee! Thanks for sharing!
